Greek Salad (serves 4)
120g/4oz of Linwoods Shelled Hemp
1 Cos Lettuce
4 Beefsteak Tomatoes
1 Cucumber sliced
160g Feta Cheese sliced
24 Pitted Black Olives
1 Tbsp Olive Oil
4 Tbsp Lemon Juice Freshly Ground Sea Salt and Black Pepper
2 Tbsp Oregano
- Wash and shred the lettuce, cut the tomatoes in half lengthwise, cut out the core and cut each half into four wedges. Put the tomatoes into a large salad bowl, and add the cucumber, feta cheese and olives.
- Spoon over the olive oil and lemon juice. Sprinkle Linwoods Shelled Hemp over the salad. Season with Sea Salt and freshly ground black pepper, bearing in mind that the feta is very salty. Toss gently to mix.
- Sprinkle the salad with fresh oregano and serve immediately.
